Ingredients (Serves 4)

  • 2 tablespoons olive oil
  • 1 pound scallops
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon toasted sesame oil
  • 2 tablespoons white or black sesame seeds (toasted)
  • Lemon wedges, for serving

Instructions

  1. Heat the olive oil in a well-seasoned cast-iron skillet over medium-high heat until hot but not smoking.
  2. Add the scallops in a single layer and cook for 2–3 minutes, shaking the pan occasionally, until lightly browned.
  3. Sprinkle with salt and pepper, then add 1/4 cup of water to the pan. Scrape up any browned bits and allow the sauce to develop.
  4. Stir in the lemon juice and toasted sesame oil.
  5. Transfer to a serving platter and finish with toasted sesame seeds.
  6. Serve with fresh lemon wedges.
