INGREDIENTS

For The Chicken

  • 3 pounds boneless, skinless chicken breasts approximately 34 large chicken breasts
  • Salt & black pepper to taste 
  • 2 tablespoons olive oil

For The Sauce

  • 2 tablespoons minced garlic
  • ¾ cup low-sodium chicken broth
  • ½ cup heavy cream coconut milk at room temperature
  • ½ cup grated fresh parmesan cheese at room temperature
  • 1 cup sun dried tomatoes 
  • 1 teaspoon dried oregano more or less to taste
  • ½ teaspoon crushed red pepper flakes more or less to taste

For the top 

Sprinkle fresh basil & parmesan cheese.

Cooking Directions

Pan-Sear the Chicken.

Add oil to a large cast-iron skillet, and place the skillet on a stovetop burner set to medium-high heat. When the oil’s nice and shimmery, lay the seasoned chicken breasts in the pan and sear them on each side 3-4 minutes. Don’t cook them too long – you don’t want them cooked all the way through just yet! Just leave them long enough that they become a little golden on both sides, then transfer the chicken breasts to a plate and set them aside.

 

Make the sauce. 

While the chicken cooks, add the remaining ingredients to your crockpot.

Once the chicken is golden, add it to the crockpot, set crockpot to low and cook for 6-8hrs.

Top it off with basil and parmesan cheese, can be served on its own or with rice, quinoa, or pasta. enjoy!
