Ingredients

  • 2 lb boneless, skinless chicken breasts (about 4 breasts)

  • ¼ cup all-purpose flour

  • ¼ cup chopped cilantro, plus more for topping

  • 2 tbsp coconut oil

  • 1 tbsp olive oil

  • 1 garlic clove, minced

  • 1 cup coconut milk

  • ⅔ cup chicken broth

  • 1 tbsp brown sugar (or coconut sugar)

  • 2 limes

  • 1 green onion, chopped (for garnish)

  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F.

  2. Heat a large oven-safe skillet or Dutch oven over medium heat. Add the coconut oil and olive oil.

  3. In a bowl, combine the flour and chopped cilantro. Dip each chicken breast into the mixture until lightly coated, then place directly into the hot skillet.

  4. Pan-sear the chicken for 3–4 minutes per side until lightly golden. Once nearly cooked through, add the minced garlic and sauté for about 30 seconds until fragrant.

  5. While the chicken is searing, whisk together the coconut milk, chicken broth, brown sugar, and the juice from one lime.

  6. Remove the skillet from heat and pour the coconut milk mixture over the chicken. Transfer the skillet to the oven and bake for 10–15 minutes, or until the chicken reaches an internal temperature of 165°F.

  7. Remove from the oven and drizzle the juice from the remaining lime over the chicken. Finish with salt, pepper, extra cilantro, and chopped green onions. Serve warm and enjoy.
