Warm, comforting, and packed with nutrients, this broccoli soup brings a delightful twist with coconut milk and a hint of curry spice. Perfect for cozy nights, it’s as good for your taste buds as it is for your skin!

Ingredients

  • 1 tbsp coconut oil
  • 1 good-sized yellow onion
  • 3 cloves of garlic
  • a head of broccoli
  • 1 zucchini
  • 1 tbsp curry powder
  • 1 – 2 tbspnutritional yeast
  • 2 cups stalk (chicken or veg)
  • 2 cups coconut milk
  • sea salt and cayenne pepper to your liking

How To Make

1. Coarsely chop yellow onion &  garlic.

2. At the same time, heat 1 tbsp of coconut oil in a saucepan

3. Get some colour on your onions, and sauté them for a few minutes in the coconut oil.

4. Add your curry spice, to the onions. Optional: Sprinkle in some extra turmeric

5. In your blender, coarsely chop your zucchini and broccoli (stems included), and add them to your saucepan with the onions

6. Let the veggies get fragrant for a second and then add in your liquids

7. Bring to a simmer and let it build flavor for at least 10 minutes

8. Blend together using an immersion blender or by carefully adding everything back to your blender

9. Adjust spices as necessary.
