As the weather cools down, there’s nothing better than a warm, nourishing soup. This Chicken Soup is not only comforting & delicious, but it’s also packed with nutrients that support healthy, glowing skin.

Ingredients

1 Tbsp Coconut Oil

1 Bay Leaf

1 Large Onion, Diced

2 Garlic Cloves, Chopped

1 Large Zucchini, Chopped

1 Large Skinless Chicken Breast, Cubed

2 Large Carrots, Chopped

2 tsp Dried Thyme

Salt & pepper, to taste

2 Quarts Chicken Bone Broth

2 Cups Fresh Spinach

Instructions

  1. Add coconut oil to large soup pot over medium heat.
  2. Add bay leaf, onion, & garlic. Sauté until the onion is translucent, about 3 min.
  3. Add chicken breast & cook until lightly browned on both sides, 4-5 minutes.
  4. Stir in zucchini & carrots, then continue to sauté for another 5 minutes.
  5. Season with thyme, salt, & pepper.
  6. Pour in the chicken bone broth. Stir well, cover, and bring to a boil.
  7. Reduce heat to low & simmer for 20minutes.
  8. Stir in fresh spinach just before serving , allowing it to wilt gently.
