Ingredients
1 Tbsp Coconut Oil
1 Bay Leaf
1 Large Onion, Diced
2 Garlic Cloves, Chopped
1 Large Zucchini, Chopped
1 Large Skinless Chicken Breast, Cubed
2 Large Carrots, Chopped
2 tsp Dried Thyme
Salt & pepper, to taste
2 Quarts Chicken Bone Broth
2 Cups Fresh Spinach
Instructions
- Add coconut oil to large soup pot over medium heat.
- Add bay leaf, onion, & garlic. Sauté until the onion is translucent, about 3 min.
- Add chicken breast & cook until lightly browned on both sides, 4-5 minutes.
- Stir in zucchini & carrots, then continue to sauté for another 5 minutes.
- Season with thyme, salt, & pepper.
- Pour in the chicken bone broth. Stir well, cover, and bring to a boil.
- Reduce heat to low & simmer for 20minutes.
- Stir in fresh spinach just before serving , allowing it to wilt gently.
